What's Cookin?? Chicken and Dumplings

This is my fast version of chicken and dumplings. Meaning this one does not have rolled out dumplings. We like these every once in a while and that time was the other day. I like these dumplings when they get a little crusty from being under the broiler for a few minutes. This is an all in one dish too, makes for an easy clean-up. This is What's Cookin on Beaty's Creek.Needed:1 whole chicken1 bag baby carrots2 T ground sageSalt and Pepper to taste3 cups Bisquick WaterFirst make your "dumplings". I take 3 cups of Bisquick to 1 1/2 cups milk and stir until a sticky dough forms. This is what you will drop into your broth.Cover chicken with water and add salt, pepper, sage and carrots. What's Cookin?? White Chocolate Macaroons

Raine and I came up with this recipe because I was going to make white chip cookies and then macaroons. We decided to combine these into one cookie and this is the result. They turned out quite tasty as they disappeared in record time. I know it is too hot to be doing much baking but make these in the morning and then take them with you to the creek or pool. Needed: 3 egg whites 1 T vanilla 1 t salt 1 cup sugar 3 cups coconut 2 cups white chocolate chips Beat egg whites in your Kitchen Aid mixer until soft peaks form. Hold on to your hats folks because Stacey has gone veggie. I just love a good vegetarian meal and will occasionally add my favs to the blog. I live amongst the carnivorous so these will be in addition to my usual recipes. You will hear about the good recipes and I'll save the bad ones for the dog hee hee. Well it is blueberry picking time on Beaty's Creek again and I am more than willing to pick a few gallons. What is better in a smoothie than frozen blueberries?? This recipe is one of our favorites and I am sure you will like it too. I have been using the I Can't Believe It's Not Butter brand of butter and I am surprised it isn't! It tastes good and it is great to bake with also. Pulled Pork SandwichThis is an easy dinner for me and it can be for you too. Fire up the crock-pot, this is What's Cookin on Beaty's Creek today!Needed:1 pork roast with fat1 jar of your favorite bar-b-que sauceSalt and Pepper to taste1 cup waterSalt and pepper pork roast really well and place in your crock-pot, now pour bar-b-que sauce and water over roast. Cover and cook on high all day. When roast is done, shred meat. We serve ours on a large hamburger bun with cole-slaw on the meat and bun on top. We eat this with a fork of course....

Broccoli Grape Salad   I can eat this salad everyday of the week. It all started when I was prego with baby number 3, Miss Raine, who just happens to be 3 right now. I craved this salad so often that I knew that I needed a master recipe, instead of buying my deli out of it each week. The hardest part for me was the dressing but once I mastered that, it was smooth sailing. That is until I started craving Gala apples and Havarti cheese.  My garden is putting out quite a few zucchini squash right now and I am so glad. See, I am not a person who raises a million squash and then tries to find a home for all of it. I raise a good share but not like people you hear about who raise truckloads. I freeze a good portion of mine but we also like to enjoy them while they are fresh. This cake is so moist and chocolaty that your kiddos will never know that there is anything "good" for them in it. You can ice the cake to make it even better but we like ours without icing. This is the only time I will ever type that, we like our icing around here... Dried Apples I have so many great memories of my Granny West's dried apples that she would make every year. It was a big treat for a kid who never got anything sweet. My Grandpa West made a screen sheet of sorts to place the apple pieces on with another sheet of screen placed over the top. In the morning he would climb a ladder and place this screened contraption with apples on the roof top for the day. In the evening he would climb that same ladder and bring them in the house for the night. In the morning he would climb up the ladder (mind you he was in his late 80's while doing all of this) flip the screen contraption over and leave them to bake in the sun. It usually only took a couple of days in Oklahoma to make dried apples. Granny would let me eat a few but the...

Salmon PattiesThis is a kid friendly meal that adults like too and is always a good dinner or lunch. I serve these patties with sweet potato fries. You can eat these patties on a bun or not. Raven likes hers served as a burger but it is up to you. Anyway that is "what's cookin" tonight on Beaty's Creek.Needed:2 cans of salmon(I use wild caught salmon)Juice of one lemon1/2 cup mayo1/2 cup bread crumbs(I make mine own but store bought is fine.)1 egg-beatenSalt and Pepper to tasteI really crushed the bones that are in the canned salmon. I mix everything together and make patties in my hand. I place the patties in an oil covered skillet over medium heat. Brown them on both sides, this usually takes bout 5 minutes per side.
