Four weeks till torticollis’ turn

I’m sitting here at work for the second day in a row with tears trickling down my face. I was fine with this a few months ago. Sure, at first I was heartbroken when I found out Lily would need surgery for torticollis and she would need to wear a halo system for six months up to one year. But after a couple of months, I got used to the idea. And now with the pre-surgery date approaching in two weeks and the surgery in four weeks, I’m regressing to the moment I heard the news. I’m so scared for what Lily has to experience. She freaks out when I trim her nails. In fact, last time I gave her an at-home manicure I thought passersby were going to call child protection. The girl does not like to be messed with. Maybe that’s a sign of how strong-minded she will be...

Fall is finally in the air on Beaty's Creek and I am so glad it is. I love soup when it starts to cool off and this one is perfect on a crisp Fall evening. All enjoyed this soup and that is a big plus for a family of 5. This is What's Cookin on Beaty's Creek today. Needed: 5 Italian sausage links- sliced and then browned 1 onion-chopped 6 garlic cloves-minced 2 quarts chicken broth 2 cans Italian tomatoes-undrained 1 package Barilla's cheese tortellini 2 bags Fresh Express baby spinach 3 T dried Italian Seasoning 3 t fresh basil-minced 1 T black pepper 1 T crushed red pepper Shredded Parmesan cheese Brown sausage in a deep heavy bottom soup pot with onion, garlic, salt, and pepper. What's Cookin?? Pumpkin Cake

  When Fall weather starts to cool things off here on the creek, it's time for a pumpkin cake. A nice big pot of hot tea also, can't forget that one. I just love the way this cake smells while baking in the oven... It makes the whole house smell of Fall. This is What's Cookin on Beaty's Creek.   Needed: 4 eggs 2 cups sugar 1 1/2 cups oil 2 cups all purpose flour 3 t cinnamon 1 t salt 2 t baking soda 1 1/2 t baking powder 2 cups canned pumpkin 2- 8 ounce packages of cream cheese at room temperature 4 cups powder sugar 1/4 milk Cream together eggs, sugar, add oil. Blog #5: Baby Shower

Well, the first baby shower went extremely well. My family decided to do one huge one, instead of several small ones. Luckily, I was able to get out of the house with the guys from the family, while Erin spent time with family and friends and opened gifts.   I arrived thirty minutes before the shower was over, so that I could personally thank everyone that attended. Times like these really remind me how blessed my wife and I are with such loving friends and family. We received so many awesome gifts for Sophie. This girl will have everything we could possibly dream! Time is ticking until the arrival date. We are about 7 weeks away and I can really begin to feel the sense that things are about to significantly change. My thoughts have...

Blog Post #4: Newborn Stuff

  Wow!  One never realizes how much stuff a baby needs.  Not until we started shopping for Sophie, did I start to realize that it takes a lot to welcome a newborn into the world.  Luckily, I am very blessed to have such a wonderful and supportive family to help us provide for our little girl.  From the crib to the diapers, and everything in between, Erin and I were dishing out a small fortune so that we would be ready for Sophie.    This is why I am so glad that I have joined the board of Emergency Infant Services!  If you are not familiar with Emergency Infant Services (EIS), they provide all the necessary items for newborns to the age of 5.  I know there are a lot of people in this community who are suffering from the tough economic times to...

What's Cookin?? Salsa Roast

This recipe is super easy and super good. To me it seems when something is easy to make it is not always easy to eat. My MIL made this for dinner one night before Sean and I were married and I loved it. I make it a few times a year and each time there are no leftovers. Our family is growing so we have to find a pretty big roast to cook. The size of the roast is entirely up to you; the gravy the roast cooks in makes a lot so you won’t run short no matter how big your roast is. This is What’s Cookin tonight on Beaty’s Creek.. Blog Post #2: Our First Baby Shower

  Well, the last doctor check up went well.  Whew!  We have been very lucky that every check up has been great.  Normally, I tend to worry about things a lot.  However, with this pregnancy I have been super relaxed.  I am taking it one day at a time and trying to live by the motto: If the doctor says there is nothing to worry about then there is nothing to worry about.    My wife works in a newborn nursery, so she has heard a lot of horror stories.  Naturally, she is a little more worried than myself, since she knows what can go wrong.  However, when negative thoughts creep in my head I rely on my faith in God.  We both know that no matter what he has in store for us, he will guide us along and take care of us.   In other news,...

Blog Post #1: The Day I Found Out

  The day I found out that we were having a child was one of the best days of my life.  I'll never forget that day, because we were getting prepared for a major winter storm.  Yes, that is how I remember most of the major events in my life, by what weather event was occurring at the time.  Immediately my whole mindset changed.    Before, I used to travel through snow haphazardly.  But, that would change after I found out that my wife was pregnant.  I now thought about how careful I must be, because I am going to have to provide for a child.  It's like a six sense that came over me.  A sense that my whole life is going to be turned upside down, but for the better.   I have to give a lot of credit to my wife!  This week she...

What's Cookin?? English Muffins

English muffins are one of Sean's favorites but for me, not so much.  I much prefer a buttery croissant that is much healthier (~; Raven calls English muffins"egg McMuffins."
